
I don’t even like blueberries and this is the perfect summer pie. I’ve been making it since I fell in love with her first cookbook, The New Midwestern Table. Amy Thielen is by far my favorite recipe developer because every step is so perfectly described. I cannot recommend her two books enough.
The crust recipe is spot on. I am a salt fiend so I use salted butter, but if you don’t have a problem like me do it as is. I also use the crust recipe for every pie, it’s that good. A lot of modern recipes use the food processor to break down the butter. But, the sensory experience of smushing the flour into the butter is just one of life’s pleasures. Plus your kid can help do it!
